Chamomile and Honey Cookies

These cookies are perfect for your afternoon or evening cuppa. 

The soothing chamomile and sweet honey will have you feeling relaxed and rejuvenated.

Prep 15 minutes, cook 14 minutes

Ingredients

 

150 g (1/3 pound ) softened butter

½ cup (4 oz) brown sugar

½ tsp vanilla essence

1 tbs honey

1 free range egg

1 ¼ cup (1/3 pound) self raising flour

1/3 cup chamomile flowers (or 6 chamomile tea bags)

Method

 

  1. Preheat oven to 150C (300F) and line a baking tray with grease proof paper and spray with oil.

  2. Crush the chamomile flowers with your fingers into a bowl (or open the tea bags and pour in a bowl) and set aside.

  3. Cream butter, sugar and vanilla essence until light and creamy (1-2 minutes). Add the honey and egg and mix lightly to combine.

  4. Add the flour and chamomile and mix lightly until it forms a soft dough.

  5. Drop teaspoons of mixture on the tray, allowing room for dough to spread. Flatten each spoonful with a fork that has been dipped in water.

  6. Place in the oven for 12-14 minutes.

  7. Allow to cool and serve with your favourite tea and sit back and mindfully savour the sweet taste!
